Course availability dates are often set by the school and then can be adjusted by the instructor. If you are looking for a particular course and it doesn't not appear in your All Courses list, the best thing you can do is contact the instructor of the course. (If they're not available, the department would also be a great starting place.) Alternatively, you could see if the Canvas Support team on your campus would be able to help you find out who to collaborate with to regain access or retrieve the information you need.
