I'm new here. Happy to meet everyone.
I live in the Raleigh-Durham area of North Carolina and am an adjunct professor starting up my first online course using Canvas. My school doesn't have an instructional designer yet, and in any case it is 700 miles away. I would like to get in contact with an instructional designer in the Raleigh-Durham area.
Any suggestions?

I need to sit down with an instructional designer who can show me the
basics of building a course.
I know I can look at videos and such, but it would be a far more effective
use of my time if I can have a live person there to interact with. It
probably will be for 2 - 3 hours.

I don't think you should necessarily stop your quest for some face to face (f2f) assistance, but there are many many resources and methods for getting started with course design and/or instructional design basics. The community college I work for also does not have an instructional designer but we have taken advantage of the limitless potential of this community to support our faculty (new or vets) in creating courses that we think look and work pretty good. While not an example of an academic course, you can take a look at our Resource Center for Faculty to see that with help, you can do it!
I'm not sure how you're using Canvas exactly (Self-Hosted, Free-For-Teachers, or through an institutional subscription), but you may have access to Canvas Commons, and there will be a lot of resources there you can import into a course and start using right away. One great keyword to search for there is "Template." There are others and maybe some other folks can leave those in a comment here. Do a search here in the community for "Canvas Commons" to learn more.

There are several documents here in the community that will allow you to access some example courses that you can start with and just modify to suit your needs. If you were to have trouble with anything along the way, the community will, of course, be here to assist you.

I've gotten advice from 3 or 4 folks, thank you.
But no one has come forward to take the position. I guess there's no one in
the area that I live who does Canvas instructional design.
Maybe I should try a local university…

Thank you for replying. I would definitely like to talk with you. I live in
Morrisville and am preparing a course on theological apologetics for the
Unification Theological Seminary.
I'm at a stage at which I don't know what I don't know (as the Landmark
people put it). But I'm a pretty quick learner, I think. I've taught online
using Adobe Connect, ten or twelve courses. But Canvas is a new
environment. The job might be rather quick, like an hour or two, or not.
