Is there a way for students to view their insights? As of right now, the only advice I could give to an instructor was to take a screen shot of the individual's graphic or download each csv from each video and then create an individualized csv for each student. Both of these are not exactly user or time friendly options. Is there a method that I have not been able to find? Thank you.

As far as I know, if an instructor shares a video from Studio, those "Insights" are only available for the instructor to view. However, if a student had his/her own video in his/her own Studio library and that video was shared in some way in a course for others to view (such as shared in a Discussion topic, for example), that student would be able to see the "Insights" for that video.
