Why is the ePortfolio Course Submission feature only showing the most recent assignments?

I have several students who are trying to submit past assignments to their ePortfolios, but the 'Course Submission' feature is only showing their most recent submissions, usually through November (although some are a little luckier and can see one or two things from October). The view has also changed from the example Canvas has posted on their guide page here. I'm attaching a photo of what it looks like for us as well as a copy of Canvas's example photo for reference. 

Students have access to their past courses and assignments (we don't use the conclude course feature), and it was working the way the instructor guide shows at least as recently as six weeks ago (and a student just came to me to say it was working last week for her). Has something changed in the settings, or is there something I need to do on the Admin side to help them access their previous assignments in the ePortfolio system?

Thanks for providing the screenshot and the guide you've been using for reference. A few possibilities - they're going to past courses to retrieve content right and not using the feature for recent submissions? "The Recent Submissions section displays a list of your recent assignments. You can quickly add a recent assignment submission to your portfolio by clicking on the name of the assignment. Select the section in which to add the submission as a page. Then add a page title. When done, click the Add Page button." This would likely only display a couple recent assignments and not the full chronological list.

If that isn't the issue, have you gone in to check some of these old courses? Some schools and institutions clear out student submissions after a certain amount of time-are they still in the old courses? If they're not, that would be why as the source is gone. If they are still there but not populating.. that is peculiar and you would  probably want to speak with Canvas Support directly to look into the issue.
