I am trying to grade papers that were submitted yesterday.  I’m well within the deadline to submit grades. Canvas has unpublished my course and I can get into it and see the papers, but I can no longer use the rubric feature, which I need to calculate my grades.

A course can'e be "unpublished" once there are assignment submissions.  However, there may be a course end date or term end date which has been reached (see https://community.canvaslms.com/t5/Canvas-Basics-Guide/How-do-term-dates-course-dates-and-section-da... ), or the course may have been marked as concluded (see https://community.canvaslms.com/t5/Instructor-Guide/How-do-I-conclude-a-course-at-the-end-of-a-term-... 

If either of these is true, then the course will be in "read only" mode, and you can no longer make changes to it.

If the school has a grading period which extends past the "term end" date in Canvas, you may want to contact the Help Desk/Canvas Support at your school to investigate the term date settings in Canvas.
