What is the difference between "assignment" and "quiz"

I could not attend workshop on Canvas, so I am trying to figure some of it out.
When I select "Assignment", I do not see anywhere the type of questions I could include (MCQ, open-ended questions, essay question etc.).
What is the difference between "ASSIGNMENT" and "QUIZ"?

A Canvas "Assignment" can be anything from a written assignment, to group work, to a year-long project. Quizzes in Canvas can be quizzes, tests, exams, etc. where students are getting multiple choice, true/false, matching, etc. kinds of questions. Just keep in mind that graded quizzes can appear on the "Assignments" index page, though...because you can make assignment groups to organize all the asssignments (and quizzes) in your course and even weight assignment groups.
