Are we able to email professors after the class has already ended, or is our professor no longer able to see our emails? I wanted to ask a reference, but I am unsure if they receive anything from old students.

If you are still seeing the course on your dashboard or course listing and you can get into it, then you should be able to go to your inbox in Canvas, select the course from your list of courses and select the instructor to be the recipient of the message. If you cannot see your course, then it is not possible.
