I don't believe you can customize the Course Setup Checklist. However, this has been a request shared with others for several years.  Institution Specific Course Setup Checklist: Make it Relevant could be an excellent place to share your story. 

You could also browse the  . While not a perfect answer for your request, I hope it you still find some help so you can get started.
