It would be great if we could have a feature like google classroom, where I can see and interact on a student's paper while it is being typed on. Right now, I can only see their work AFTER they have submitted it, which leads to them having to resubmit multiple attempts. I really wish this could be changed.

That's an excellent idea, @JillianGuthrie and currently cannot be done with Canvas (even for content pages that students can edit). The best option is to suggest an idea to improve Canvas, and the process for that is detailed in the following page:

Do you know if your institution has the Google Assignments LTI 1.3 integration (external tool)? If you use this LTI tool to assign content from your Google Drive, Canvas creates a folder in your Google Drive called Assignments and places the student work there. You can open student work in your Drive to see what they are working on in real time because the document is Shared with you. It's not quite the same as having the Google Classroom dashboard, but it is a potential option if you have the LTI tool.
I love this idea and can see a lot of benefits from being able to work through a quiz with a distance student without screen sharing.
