Assigning to single students vs. whole class assignment

Is there a way to assign something to single students instead of whole class assignment?

Yes. In the "Assign To" box at the bottom of an assignment, start typing the student's name. Select it and make sure "Everyone" is deleted. When you assign it, only that student will see it in their list of work to complete.
