I have 10 students in one course. 9 of them can see the course content and 1 can't. When we log into that student's account, I add them to the course and see it on the dashboard. Each time we log out of her account and log back in, there are no courses on the dashboard. I'm at a total loss as to how to fix this. Any help would be greatly appreciated!
I believe this course hasn't been added to the courses menu by the student. You can achieve this by selecting the 'courses' button in the left hand menu > clicking on all courses > and clicking the star next to the desired course. I hope this helps!

Thank you @Chris_Hofer and @ember314. However, neither of these things are the issue. The student is enrolled in the course (I have done invitations and join codes). Each time we enrol her, we see the course content and it seems everything is fine. She then refreshes the page or logs out and the content disappears and a notification appears that she's not enrolled in any courses.

In my experience a situation like this, when 90% have success and 10% does not, indicates a problem at the student's end and not with Canvas. Has the student tried using a different browser? Has she cleared her cache and deleted cookies? Has she ensured she does not have multiple accounts open on her device?
Are these K-12 students using school-issued emails? If so, I would have your IT team look into her account.
If these are adults or other students enrolling with their own credentials, I would have her try creating a new email account (such as Gmail) and then try inviting her from that account to make sure the email currently being used isn't corrupted in some way.

It looks like there was a tech issue on Canvas itself last week as the issue resolved itself.
I am the IT support person for our courses and am very comfortable navigating Canvas, but this specific issue was new and just strange. I tried everything suggested here and more before posting originally - I've never seen this particular issue before on Canvas. The student was unenrolled in her courses every time she logged into her account last week.
Anyway, thank you for the suggestions. I still don't know how to fix this issue, but at least it's resolved itself.
