[Mobile - Canvas Student] Scanning as PDF instead of image

Problem statement:

Currently, when using the scan button on the iOS app as a student to upload an assignment, the scan gets uploaded as jpg.

Proposed solution:

I would propose to switch that upload file type, or at least have the option to switch, to a PDF when using the scan option in the mobile app. This would allow for their handwriting to be transferred to OCR and for instructors to use tools such as TurnItIn with assignments. Most scanning apps at least have the option of switching file types. It would be nice if students could skip using other apps and simplify their process of uploading their assignment.
