Can AI (such as ChatGPT) assist in evaluating my personal course's alignments and relationships between the course learning objectives, module-level objectives, assessments, activities, materials, and tools? How might AI help me pinpoint or highlight gaps that I may have missed or ensure these components effectively support one another? (Note: output would need my cross-verification, of course -- but could be a great once-over?)
Has anyone explored this idea with anything to share?

I am not familiar of a way you could use AI to evaluated and check over an entire course at once. You could copy various parts of your course content and paste it into ChatGPT or another AI tool and ask it to analyze what you have. Depending on the amount of content in your course, this could obviously be a tedious process. This is a great idea and maybe someday will be possible, but I am not aware of anything currently. If anyone else knows of something, I would love to hear about it too.
Its definitely possible. We've built an LTI that allows students to ask questions about course materials by talking to an LLM (like ChatGPT) directly within canvas so in theory something like that could be used because it has all of the course documents and slides as context so in theory you could ask it questions about the style of course material and if it aligns with certain learning objectives. I really don't like to plug what we've built but if you want to see an example of what these tools are capable of you can view an example: Lecture Genie Chat Example I'd also really like to know if there are tools out there that do exactly what you're asking there because i certainly could see the use case!
