Can I use music from iTunes in a Canvas course, if I have permission from the publisher?

From a technical standpoint; if you can export the music from iTunes into something like MP3 format, then yes you can add it to a course in Canvas using the Rich Content Editor.  Here is a guide page about that https://community.canvaslms.com/docs/DOC-12981-415265825 

As for the legal aspect; it's probably ok to do with permission from the publisher, but you might want to check with experts at your school about that for sure.  I tend to speak with librarians about those types of questions.

You can always use royalty free music for just 9$ to use in your courses, because of it's use creative commons license you no need to pay something to authors.
