There is currently no way to change the font anywhere in canvas via the normal rich text editor. You can change the font by using the HTML editor.

I want to know because sometimes I copy and paste from other sources and want to use the preset font.

@JmeC Lato is the default font in the standard Canvas LMS; for those schools that have turned on the Canvas for Elementary theme, the default font is Balsamiq Sans.

Your response is marked as the answer, however it does not actually answer the question about DEFAULT fonts/sizes. Your solution requires us to change the font/size on every page.
What we would like to know is how to change the default font/size for a course so it is what we want every time we create a new blank page.

I don't think there's an easy way to modify the RCE (editor) defaults. An administrator could use the global CSS upload option in the theme editor to try to override the default font face and size everywhere in Canvas, but I have a feeling that could cause some undesired formatting issues in various places, and I don't think it would carry over to Canvas apps either. I don't think I'd personally suggest going down that route, but it may be an option if your school/institution wants to try it.

@A_Destro There is not really a way for the default font to be changed for everything in a course. If you have someone that knows CSS, you might be able to add CSS to the theme for all of Canvas or at a sub-account level to switch it out. I am not sure anyone has really figured out the required CSS though as this question has been posted other times in this community (including by me) and there has never been a solution.
