In graded discussions but with a 0 point value how do I indicate the student has contributed? What does the check mark mean? what does the X mean?

Hi @jhoward21 Welcome to the Canvas Community. Based on your question, it sounds like you created a graded Discussion, made it worth 0 points, and set the Display Grade as drop-down menu (as depicted here) to Complete/Incomplete. The green checkmark means that you gave a "complete" to a student, and the red X means that you gave an "incomplete." That information is conveyed on this online lesson on using the gradebook. (That link covers the "old"/current gradebook; here is similar information if you are using the New Gradebook.)
In your specific case, since the assignment is worth 0 points, either mark will award the student the 0. If it were graded at, for example, 5 points instead, a complete would award 5 points and an incomplete would award 0 points. So the main thing to know is that the complete/incomplete is an "all or nothing" grade. The student is either given all possible points...or none.
I hope this helps, Jody!
