How as an instructor can I change the headings and percentages in Gradebook?
The way they are listed does not align for me.

The headings in the Gradebook are the titles of the course's graded content (assignments, quizzes and graded discussions) and the titles of any assignment groups. The percentages are accurately calculated based points awarded/points possible.
How does this not "align"? If you describe what you mean by "align", I might have some solutions for you. There are some formatting and organization tools available for the Canvas Gradebook.

There are more. Please review the Grades chapter in the Canvas Instructor Guide.
You can also change the column titles by changing the titles of your graded content and assignment groups. I think it is important that the gradebook column title match the graded content titles, because this consistency is proven to help learning.
Anyways,Canvas does not have this capability beyond what I described, but you could create a new Idea Conversation to request this capability...............
