Accidentally re-assigned quiz to only 1 student

I recently had a quiz for my class of 240 students which went swimmingly. Unfortunately, I had 1 student that needed to take the quiz late. Instead of just adding them to the "Assign to" section, I reassigned it to just the one student. Obviously this was a big mistake and at this point I'm wondering if there is any way to retrieve the grades for all the other students? Currently they are all greyed out in the grade book and I'm wondering if I were to add back to the "Assign to" section all the other students, if that would fix my issue or totally delete their grades?

Please help.

You can definitely go back in, click the +Add button below the current Assign area and add another Assign to box.  You can then select Everyone Else and use the past dates.  This should bring all of the grades and access back.
