Thanks for your question! You can add a quiz in your course by clicking the Quizzes link in course navigation and then clicking the Add Quiz button. Then, depending on your institution's settings, you can create a classic quiz or a quiz using New Quizzes. Please let us know what additional questions you have.

Specifically look at.....

Quizzes: How do I create a quiz with individual questions? 

New Quizzes: How do I create an assessment using New Quizzes? 

I would check with you school's Canvas Admin/Support Department to determine which version of quizzes your school uses. If you have a choice, stick with Quizzes, it is easier to use.

If you are just now investigating this in response to CoVid-19, I would also suggest researching what support and training is being made available to faculty at your school. Both eallen and  @kmeeusen  have given you some great information.  Here are a couple short video tutorials on Quizzes...depending on which version you are using at your school:
