How would i enter the quiz questions from an older paper quiz into canvas?

I do not think that there is an automatic transfer from a typed paper quiz available yet.  You can type the questions manually into either classic or new quizzes, or copy and paste if your quiz is in a word document. 

New quizzes also has a stimulus style question.  You could use an image of the paper quiz as a stimulus, and create a list of numbered questions with appropriate response options (a,b,c,d for multiple choice for example).  That might be slightly faster to set-up, but it will be less functional than fully transferring the quiz.
