Hi Ric,

There are a number of Canvas Guides that could help you with this, as there are quite a number, I will link you to a search rather than one specific guide at Guides: Canvas

If you are wanting to specifically create an assignment rather than a quiz then this guide should point you in the right direction https://community.canvaslms.com/docs/DOC-9873-415267003 .

Lastly to pull it all together, if you want to create a group of Assignments, you could create a module in the Modules section and put all the assignments in that module to create a grouping.
