I have someone at my college who talked with Canvas support and they said that New Quizzes would become the only option for quizzing during this year (2020). Does anyone have any information on that?

New Quizzes won't be the only quiz engine in Canvas for some time. So rest assured you have nothing to worry about. Our product team is working on an updated roadmap with information about the future of Quizzes, so stay tuned!

I've done some digging in thehttps://community.canvaslms.com/docs/DOC-16601-upcoming-canvas-changes and looks like Quizzes will be deprecated very soon (mid February). Though whether this is the nomenclature 'New Quizzes' that is changing or whether it is the Quizzes button in the live instance changing isn't very clear.

Seems like that particular deprecation is of Live Events of New Quizzes. Which I found this on it, but it still isn't clear. It doesn't seem like it is talking about deprecation of Quizzes with New Quizzes as the only option for quizzing.
I wouldn't be too surprised if the change didn't come till the summer break, rather than having a potentially large impact during term time.
@wboswell , the link you provided is talking about the changing of the name of it. It was Quizzes LTI, then Quizzes.Next, and now New Quizzes (I may be forgetting a few iterations of names). It is not talking about the replacement of Quizzes / Old Quizzes / Legacy Quizzes with New Quizzes.
