Canvas has a groups feature that allows you to create groups and let students sign up for the group they want.

Once students are added to a group, you can use the group for other tasks, such as associating a group with a specific assignment. Or you can have the group use their space to create group-specific discussions, collaborations, and more. Groups may be useful for your ultimate objective.
