Is there a way that students can highlight or cross off answers they believe are false in Quizzes Classic while taking an exam in Respondus Lockdown?

To my knowledge, this is not possible in Classic Quizzes within Canvas.  In fact, I don't believe there is any further development being done in Classic Quizzes any more.  Sorry that I don't have better news for you, but I hope this has helped to answer your question.  Stay safe, and be well.
