Hello, I recently had a midterm and needed to email the course coordinator because I couldn't submit my work. The issue was that I sent the email at 9:02, just 2 minutes after the deadline but the instructor said he received it at 9:14. Is there any way to download the email or prove that there was an attachment on my email on Canvas to prove that the email was sent at 9:02? He requires solid evidence, and screenshots do not count.

It is very likely that you may have sent it at 9:02 but the instructor did not receive it until 12 minutes later, as that could simply be transmission and processing time.
However, Canvas does not have email, so I suspect you used your school's email account. You will need to take this up with your school.
I will tell you, in all honesty, I do not this you will win this argument with your instructor or Course Coordinator, regardless of how fair or unfair this might be.
