I am an instructor and all my classes that rolled over from Powerschool are showing up in "Past Enrollments" with an end date of 8/13/20. How do I make these courses current so I can create my course and have students be able to participate?

I suggest talking to your school IT department or whomever manages Canvas. You might be able to go into Settings in the course so change the dates yourself, but if it's wrong on your courses it's likely wrong on everyone's and letting your people know about it to fix it for everyone is a better course of action.
