I have sent 3 emails to the help desk and still have not gotten a response!!! I am an ESE teacher, and have lost 4 of my classes from Canvas. How do I retrieve these lost classes???

Have you reached out to the local Canvas administrator or someone from your school's Online Learning/eLearning department to see if that person might be able to help you? This would be the best way for you to find out why your course(s) are not listed any more on your Canvas account. Also, if you haven't done so yet, be sure that the courses are (or aren't) listed on your "Course" >> "All Courses" screen. If you cannot see them listed there, they for sure reach out to someone at your school who can investigate this further with you. I hope this helps, Suzzanne. Stay safe, and be well.
