I do not understand why when I send an email to ALL in a course it never goes to the instructor. This is a maddeningly hateful feature of Canvas. Please someone explain it to me.

@w_bloodgood , in addition to Kelley's helpful recommendation, instructors can also set an external notification for "Conversation created by me." Please refer to the How do I set my Canvas notification preferences as an instructor? for details.
Yes, I have that feature, but I teach a course with three other co-instructors. How can I copy what I’ve sent to students to the instructors?

If they are listed as user in the course, and you have chosen the "All in course" option, then they will also get a copy of your message. If you simply choose "All students", then they won't. If this is not what you are experiencing, then I would suggest submitting a support ticket, using the Report a Problem" link in the Help menu.

To be clear, I’m wanting the copied email to go to everyone’s university address, not their Canvas Inbox.
I have always selected All in Course and it has never worked.
Am I asking for something that isn’t possible?

The Canvas Inbox is not email, and does not function like email. It is a messaging tool deisgned to send messages between the members of a Canvas course. It does not send messages to email editors/servers/accounts etc.
However, The Canvas Notifications feature can notify users by a variety of means, including their email addresses on file in Canvas, if the user has set their Notification preferences to do so. stefaniesanders share a link on how to set up Notification Preferences in her answer above. Ask your co-faculty to set their to forward inbox messages if that is what they want. Otherwise, they can view your messages in the Canvas Inbox.

Aha! Well I think many people do not know that.
I know where the Notifications link on my Account and I see where I can ask for immediate or daily notifications. Is this where I need to ask my co-instructors to change their settings?
In spite of what you say people treat the Canvas messaging system like email and call it so.

Call it what you want, but it is what it is, and it ain't what it ain't.
We teach all our faculty and students to not consider it email.
@w_bloodgood , as Kelley has explained, selecting "All in course" includes all enrolled users as recipients of the message. If you are experiencing behavior that is inconsistent with this, please ask a member of Canvas Support to have a look at how the co-teachers' enrollments are configured.
