The help documents provided by my University recommend using ARC to embed video, but it's no longer available in the "External tools" category. So...
I've tried the Embed a video through "Google LTI" but after clicking 'embed' no code or anything is added.
I've tried "Record/Upload" media, and that works but rather than embedding a video with a control bar, it puts a small thumbnail image in the page - it can be played but it's not the way it should ideally look and function.
I've tried "Insert/Edit media" and it puts what appears to be a video on the page (with a control bar etc) but it doesn't play when the 'play' button is clicked.

The "Video Quiz Embed" tab that you see displayed in the Guide that I linked for you in my previous reply is only available if your school's local Canvas administrator has enabled that particular feature for Canvas Studio. Here is the Guide that you could provide to your school's Canvas admin to see if they would be willing to turn this option on: https://community.canvaslms.com/docs/DOC-17728-507361147416 You'll see that it's the row for "Add video quizzes to media". It can be turned on for either teachers or students or both.
Since I am unable to see your course or your school's Canvas environment, you may need to consult with your school's local Canvas admin or their Online Learning / eLearning department for further help with this.

The "Arc" terminology no longer exists. "Arc" was renamed to "Stuidio" (or "Canvas Studio") in July 2019. Studio Release Notes (2019-07-02) When trying to select an external tool LTI, do you see anything referencing Studio in your list? If your school has purchased Studio (formerly Arc), you should see a "Studio" button along the left hand side global navigation within your Canvas environment. Hopefully this helps, but you may need to reach out to your school's Online Learning or eLearning department to see if Studio is still available to you in your Canvas instance.

I did wonder about that - as I'd not seen Studio there previously.
I have also tried the Studio option, it allowed me to upload my video to "My Uploads" - and I can select it, and indeed click the "Embed" button, however when it returns me to the page I am editing, there is no video embedded, and no code evident when viewing it in "HTML Editor"?!

That sounds super strange that you wouldn't be able to embed the Studio video into a content page within your course. To be sure, after you have added the video to your Studio page, are you using these instructions? https://community.canvaslms.com/docs/DOC-9677-50736467904 Take note that the Studio icon may be somewhat hidden within the blue "V"-looking icon as described in the "Open Rich Content Editor" section of the Guide I've linked for you.

Yes that is exactly the process I'm doing, the only difference between what I'm seeing and what is in the document is that I see no "Video Quiz Embed" option. Just for good measure I uploaded the video again with a unique name but to no avail.
It does cross my mind however - and maybe this is crazy, but: I've recently become the course co-ordinator of this course but I notice I still have 'teacher' access only. The video I'm trying to add is in the Welcome page - and maybe I need to be the official co-ordinator to edit this?!
