I teach a course for which we host weekly guest speakers. With COVID19 and our institution switching to all-things-online, I would like to add several people to my Canvas course who are not affiliated with our university and who will serve as guest speakers. Neither their professional nor their personal email extensions are the same as our university's extension.

This would be something that your host school would need to help you tackle.
If you are using Canvas conferences, everyone has to be enrolled in the course. Your host school would need to create an account for these guests -- you'd need to see what, if any, policies there are for this. If you are using a tool like Zoom, you could just provide the Zoom link to the guest speaker without the need to enroll the speaker into the course.
