I can't remember how to save my gradebook as an excel file.

Assuming that you are an instructor, you can import/export your Gradebook.  Here are a couple Guides for you:

• https://community.canvaslms.com/docs/DOC-26281-how-do-i-import-grades-in-the-gradebook (upload changes back to your Gradebook)
