I have noticed that Canvas Quizzes (both the new and old versions) do not show up at all on my To Do list. They don't appear when students first take the quiz on the due date, they don't appear when students retake a quiz after being allowed another attempt, and they don't appear when students take a quiz later on.
At this point, I make it a point to go back through the quizzes once a week to see if I have any new submissions, but 8 quizzes into the quarter, this is getting time-consuming and tedious.
Is there any way to fix this so that quiz submissions show up to be graded in my To Do list?

Quiz submissions will only display on your To-Do list if the quiz includes question items that must be hand-graded like essay or short-answer items. Otherwise, they do not display because the assumption is that you need to take no further action (grading).

This semester, I've incorporated essay questions into quizzes so that they appear on my To-Do list, but they still do not appear when students complete each week's quiz. "Old Quiz" format assignments do appear on the to-do list, but "New Quiz" format assignments do not.
Any ideas?
We are having the same problem with New Quizzes.
I am also having this problem with new quizzes. The quizzes aren't showing up on my to-do-list. Unfortunately, Canvas is automatically putting in the grade as a 0. I chatted recently with customer service, and they didn't seem to understand my problem. They said that I must have graded the quizzes already because they weren't on my to-do-list. I had never seen a submission in the first place, so I couldn't have graded them.
I am having the same problem. I have several quizzes that need to be hand graded but don't show in my To Do list. This is a problem with New Quizzes; Old Quizzes show in the To Do list.
I am having a similar problem so I would love to hear what others suggest as a solution. I did one quiz (it was a 'New quiz') a few weeks ago, and as each student submitted, I got an alert saying that they submitted, and it showed up on my 'to-do' list as needing grading. But this seems to have stopped. My second "quiz" (it happens to be an exam), also has essay style questions and was built as a 'New quiz', but I get no notifications and nothing on my to-do list. That feature was very helpful!I am new to Canvas so I assumed I must have missed a setting, but I would love to know which one so I can correct it for the next time around.
We are having the same issue in our district. Classic Quizzes show on the to-do list but New Quizzes do not. I would like to hear what the solution is for getting New Quizzes to show on the instructors to-do list.
