How do I hide student email addresses from other students?  When students submit a discussion post, they can then see who else has posted, and if they click the name of a student, it opens a box with a link to the email address.  How can I disable this feature?  Thank you!

This doesn't sound like out of box functionality.  Students and Instructors should only be able to see what the user has entered into their user profile page, which by default doesn't have their email address.

You may want to talk to your school admin about if they've added any functionality around that.
