I am an instructor, is there a way to enable speedgrader to notify me when students have edited a post so the I can grade their most recent edited submission or do they have to make a brand new post.

Sorry to see that your question has been sitting out here unanswered for quite some time.  I'm not sure if this will fully answer your question, but here are some things to know about discussion topics and notifications.  You can set notifications for Discussions (new discussion topics in your course) and Discussion Posts (new discussion posts in a topic you're subscribed to).  Those are individual settings that you can set for yourself within your Canvas account (so that it applies to all courses) or at the course level:

Also, I'm not sure if you have this option turned on within your course, but there is an option to allow (or not allow) students to edit their discussion postings.  How do I allow students to edit and delete their o... - Canvas Community  As the Guide states, this setting can also be changed in course "Settings".  How do I set details for a course? - Canvas Community  If you do not allow your students to edit their own discussion posts, I am 99% sure that you wouldn't be able to get any kind of notification.  But, given the two notification settings for discussions that I mentioned in my first paragraph, those only seem to be for new posts and not existing posts.  With that said, I'm not 100% sure Canvas would notify you of a student's edit to a discussion topic (if you had that option enabled in your course).

I have a situation that is slightly different. How can a student edit their initial post as not to be  penalized for grammar, or  blank screen? Once an instructor enables the  grading option for a Discussion, the Edit abilities are disabled for the student.

To be sure, have you enabled the settings within your course to allow your students to edit discussion postings?  See the two links in the second paragraph of my above response.  Looking forward to hearing back from you soon.

Sorry for the delayed response. From what I can recall, I believe so that the  Editing settings were enabled. I think the Discussion was closed at the time.
