Sorry to see that your question has been sitting out here unanswered for quite some time. I'm not sure if this will fully answer your question, but here are some things to know about discussion topics and notifications. You can set notifications for Discussions (new discussion topics in your course) and Discussion Posts (new discussion posts in a topic you're subscribed to). Those are individual settings that you can set for yourself within your Canvas account (so that it applies to all courses) or at the course level:

How do I set details for a course? - Canvas Community If you do not allow your students to edit their own discussion posts, I am 99% sure that you wouldn't be able to get any kind of notification. But, given the two notification settings for discussions that I mentioned in my first paragraph, those only seem to be for new posts and not existing posts. With that said, I'm not 100% sure Canvas would notify you of a student's edit to a discussion topic (if you had that option enabled in your course).
