You set up grading schemes under the course settings.

One thing that may not be obvious from the guides is that you can use decimals in your grading scheme and that Canvas does not automatically round. If you want an 89.5% to be rounded to a 90% and count as an "A" then you need to enter 89.5% for the cutoff. If you enter a 90% for the cutoff, then an 89.9% is still a "B".
