Is there any way to create a correct answer for essay questions that WILL NOT be visible until the correct answers are posted? If you put it in the "general feedback" it is visible to students immediately upon submitting their quiz which means they now have the correct answer while other students may still be taking it.

No, I don't think there is functionality such that after you manually grade an essay question and give full points that feedback will be automatically revealed. I think most people tend to give feedback, even canned feedback during the process for manually marking an essay question.

Many of us have been asking for this functionality. Canvas does not appear to be reading the posts. Frustrating.
I use essay questions extensively and need an answer key to be associated with those essay questions. Using a separate document to grade tests is not reasonable as I also use question banks so that no two students are asked the same questions. Each quiz/test question has upwards of a dozen possibilities, each of which must be included in the answer key. Rather than search through an extremely long document for a particular question each student was assigned, I would much rather have that answer connected to the question in Canvas in such a way that when I open Speedgrader to grade the quiz, the answer to that essay question is right there. I have a lot of students--this simple fix would save me hours a week and a lot of headaches. This would also simplify the process of coordinating sections of a class with multiple teachers as I would not have to make sure everyone has the key, knows how to use it, and keeps it in a secure location.
It is my understanding from reading this post as well as this one that essay questions in New Quizzes do not have any answer key at all. I have experimented with the various comment and feedback boxes and have not found a way to save an answer so that it is visible to myself alone when I grade the quiz. This makes no sense whatsoever. Every other question type has an answer associated with the question. Classic quizzes had this functionality and it worked very well. I am very concerned that when Classic quizzes is phased out next summer that this functionality will disappear completely.
IF ANYONE FROM CANVAS IS LISTENING, PLEASE DO SOMETHING ABOUT THIS!!!!!!!! If nothing else, at least don't eliminate Classic quizzes--at least that works.

Thank you for that clarification. Is there a reason it is not a rich text box? It would be nice to post pictures or equations in that box. For example, if a student is to draw a diagram, the answer key needs to contain that diagram. Is that possible?
