Do I have to download assignments to grade? Do I have to upload them for students to see comments? If students redo an assignment, does the new submission take the place of the old one?

Hi @carrie_moran Welcome to the Canvas Community!
No, that is one of the joys of Canvas, you can grade assignment submissions directly in Canvas by using SpeedGrader. The Canvas Document tool can render almost any file types, and there are annotation tools and comment boxes. I would suggest exploring the SpeedGrader chapter of the Canvas Instructor Guide.
