Hello,

How do I handle setting up a course when students live all over the world. My concern is dealing with multiple time zones for assignments.

Hi, Patricia,

You can set up your course as you would even if all students were in your same time zone. All individual student accounts will update all assignment due dates, event dates, etc as per the time zone set in their individual user accounts. If they don't have a specified time zone set, they will view dates as set by the course, if one is set (see How do I set a time zone for a course?
