Our class ended but students could not take their state test due to COVID-19. We will schedule the state test later but I want students to be able to review the material and take quizzes and exams multiple times. I need to extend the semester to allow access to students.

Go to your Course Settings page and you may be able to change the date there. If you cannot change the dates, then your Canvas Administrator has it locked down and you will need to get their help in extending it.
