I am interested in adoption rates for  various LTIs used in our Canvas system. Is there any way to collect data on how often each LTI is used and what courses are using it? We tend to renew subscriptions each year without any real data on whether it’s actually being used by faculty.

I'm not sure if this will completely answer your question, but as a Canvas Administrator, have you checked out the "LTI Report".  The description of this report is, "This report provides an export of data that shows LTI (Learning Tool Interoperability) usage information."  You can run it as a Canvas admin by checking out this Guide: How do I view reports for an account? - Instructure Community.
