Hi @eabrosnan and welcome to the Community! Are you getting a particular error such as an indication that the user is not found or is the + People button not present in the People's tab? You should be able to add users to a course provided your institution permits this function. At my institution for example, instructors cannot add students to a course so while the +People button is present the user role "student" is not an option. It might not be a bad idea to contact the Canvas administrators at your institution to see if this ability is restricted at your institution as well or if the students are in the system with a standard email address such as that provided by the institution.
