I would like to set up late deductions for every week the assignment is due.  For example:

5% deduction per week
If a student submitted an assignment the next day after it's due, the grade is deducted by 5%.
If a student submitted an assignment the next day after it's due, the grade is deducted by 10%.

etc.

Is it possible?  Could you enable this feature?

The only late submission policy area I am aware of within a course Gradebook is what is described in this Guide:

How do I apply a Late Submission policy in the Gradebook?

Have you had a chance to read through this Guide?  If so, do you think it would meet your needs?

Yes, I'm familiar with the guide, and it doesn't meet my need.  I teach at a community college, and students need a more flexible late policy, especially during the pandemic.  That's why I was hoping to implement weekly rather than daily grade deductions.

Is it possible to add this feature to the roadmap?

I do not work for Instructure, so I wouldn't be able to say for certain if this could be added to their roadmap.  I would suggest that you consider creating a new Feature Idea if you want to see this included in Canvas.  Here are some documents to get you started:
